Lembram dos guabijus que ganhei há alguns dias? Pois dessa amostrinha, consegui extrair 100ml de suco coado e 80ml de uma geleia de cor belíssima. Eu não tinha gostado do gosto puro da fruta, mas concentrada e adoçada, ela liberou um sabor silvestre, ácido com um aroma pungente, que me remeteu ao cheiro do mato, na beira do rio, durante o verão. Uma experiência slow, sem dúvida. É claro que guardei as sementes!

Geleia de Guabiju
Jabuticaba
The jabuticaba (Myrciaria cauliflora) is a native tree from Mata Atlantica (the forests which extend themselves along the Atlantic shores of Brazil, in its Southern parts). The fruit appears in spring and summer and grow like that: attached to the tree branches, stem, and even to its roots. A beloved character from Brazilian children literature, the ragdoll Emília, is the most famous fan of these little sweet-sour explosions of flavour. The tree in the picture belongs to the gardens of my dear neighbour, Ms.Celia Augustin. She also gave me these jabuticabas down below:
This is my latest invention: Frau Celia Hertz (Ms Celia Heart), named after she, who gave me all the ingredients. Kes-schmier (something that can be translated as cheese-jam) which is made of unpasteurized milk (easy to find around here, because we live in a dairy producing area). It is left to curdle at room temperature and then strained in a cheese cloth. As topping, a nice dollop of my jabuticaba and ginger jelly. Frozen and delicious. I don't think I'll need anything else for today.

Butiá, Butiá e Mais Butiá...
Chłodnik
Sopa Gelada de Uvaia e Baunilha
100g de polpa de uvaia picada (guardar uns pedaços bonitos para decorar)
60g de açúcar cristal
130ml de água
150ml de iogurte natural
Ferver a baunilha por cinco minutos em uma calda rala, feita com açúcar e água. Retirar a fava, deixar a calda esfriar e misturar a uvaia picada e o iogurte, batendo no liquidificador. Gelar, mas deixar líquida. Eu servi decorada com os pedaços de uvaia reservados, folhas de cidró e um risco de geleia de uvaia. Miam, miam!
Cold soups are a lovely tradition in the Polish summer (although, as I could witness, they keep eating the hot ones despite the weather). My version is an uvaia and vanilla chlodnik: 100g of uvaia, clean and seedless; 60g sugar, 130ml water, 150ml plain yogurt, a vanilla bean. Boil the vanilla bean for five minutes in a syrup made of the water and the sugar. Remove the vanilla bean. After the syrup has cooled down, mix it with the uvaia and the yogurt and let it in the freezer until cool, but still soft. Yummy.

Lindo Calendário
