Pinzimonio

Aqui vai uma das minhas receitas preferidas para os almoços de verão: chama-se pinzimonio e é uma entrada comum nas cantinas de Roma. Fatiam-se em tiras finas diversos legumes crus, os mais jovens e orgânicos que se puder encontrar. Aqui, usei o funcho, o aipo e as cebolinhas do jardim, junto com pimentão amarelo e vermelho, cenourinhas orgânicas, pepino japonês e couve chinesa. Acompanha um molhinho de azeite (que deve ser o melhor), pimenta moída na hora e sal. A ideia é fazer uma espécie de fondue: a gente molha o legume no molhinho e come. Delícia.
Here goes one of my favourite recipes for summer brunches: it is named Pinzimonio and its a common appetizer in many Roman restaurants. Basically it consists in assorted cruditès, the freshest and more organic you can find. In this example, I chose fennel, celery and chives from the garden, along with yellow and red pepper bells, baby carrots, cucumber and chinese kale. It resembles a fondue and you dip the vegetables in a sauce made of olive oil (the best one), salt and black pepper, just grinded. Yummy.
